Salad in the summer

The hot weather was back in Eugene yesterday and as the day wound down, I was ready to enjoy some summery food. During the cold, dreary months, salads are a nice touch as a side to hearty meals. But when it’s hot out, I enjoy salads as the entire meal. For a light dinner last night, I had a green salad with chicken, walnuts, cranberries and goat cheese with balsamic vinaigrette.
